Quick Meal

I had this for tea on Thursday night, very quick and tasty....

If you like Greek food try this quick and super-easy meal that I made up yesterday!

You'll need haloumi, tomatoes, cucumber, olives, Greek yoghurt and if you like, garlic sausage or ham. Slice the haloumi, cook it quickly on a griddle-type pan. While that's cooking chop up the tomatoes and cucumber, mix them together with some olive oil and a little bit of balsamic vinegar.

Arrange the slices of haloumi, and between them place tomato and cucmber, and a couple of pieces of meat. Keep repeating that until you finish the "pile" with the last piece of haloumi. Spread any remaining cucmber/tomato around, add a few olives if you like them, and top the whole lot off with some fat free Greek yoghurt.

Lovely!

p.s. not sure what this should be called, "haloumi, tomato and cucumber slightly wonky pile with Greek yoghurt" isn't very catchy is it!
