Mediterranean Cod

A really tasty meal that makes you feel that you're eating unhealthy (therefore nicer) food, but which is actually extremely good for you!

Ingredients

750g floury potatoes

2 tbsp olive oil

4 cod fillets, approx 150g each

225g chestnut mushrooms

8 tbsp mixed pepper antipasto

2 tbsp fresh grated parmesan (which I forgot!)

Method

1. Preheat the oven to 200degrees C. Cut the potatoes into wedges and put into a roasting tin. Drizzle over the olive oil and stir well. Season. Cook in the middle of the oven for 45-50 minutes, stirring halfway through, until the potatoes are golden, crisp and cooked through.

2. Meanwhile, put the cod fillets in an ovenproof dish in a single layer. Season well. Slice the mushrooms and scatter over the fish.

3. Spread the mixed pepper antipasto over the top of the mushrooms. Put the fish in the oven on the shelf above the potato wedges 10 minutes before the wedges have finished cooking. Sprinkle the fish with the grated parmesan and serve hot with the potato wedges.

Takes: 1 hour; Serves 4.

Per serving: 359 kcal; 34g protein; 34g carbohydrate; 11g fat; 2g saturated fat; 4g fibre; 0 added sugar; 0.43g salt.

Notes

Use a REALLY sharp knife to remove the skin from the fish, and don't forget the parmesan! I halved the amount of ingredients and this recipe turned out great. It is probably the recipe I have most enjoyed eating of all those I've posted in this blog!
