I really enjoy cooking, and am getting into healthier food. This recipe is really simple, and tastes great! The ingredients are to feed 4 people, just divide them relevant to the number of people you're cooking for! Ingredients: 2 lemons 4 X 300g small mackerel OR 4 X 150g fish fillets 1 tbsp vegetable oil 3 tbsp soy sauce 1 tsp sugar Rice or noodles to serve Takes 25 minutes, serves 4
Method: 1. Thinly slice one of the lemons. Season the fish then place the lemon slices down the length of each. Tie in place with string. 2. Heat the oil in a large frying pan and cook the fish, lemon side down, for 3-4 minutes until well browned. Turn and cook the other side for 3 minutes. 3. Add the soy sauce, four tablespoons of water, and the sugar to the pan. Squeeze in the juice of the remaining lemon and simmer for 2-3 minutes until the fish is cooked through. Serve on rice or noodles, and spoon over the pan juices. Per serving: 163 kcal; 28g protein; 4g carbohydrate; 4g fat; 1g saturated fat; 0 fibre; 1.5g added sugar; 2.2g salt.
