DIABETES AWARENESS WEEK

Today's diabetic recipe - DATE, WALNUT AND LEMON COOKIES - Makes 14

INGREDIENTS - 75g lighlty salted butter, cut into cubes, plus extra for greasing, 150g dates, 75g walnuts, 1 tbsp clear honey or golden syrup, finely grated zest og 1 lemon, 100g fine oatmeal, 25g self-raising flour, 3 tbsp granulated sweetner, 1 tsp vanilla extract, 1 beaten egg, extra oatmeal for dusting

METHOD - 1. Preheat the oven to 220C/425F/Gas mark 7. Grease a large baking sheet. 2. Whizz the dates in a food processor until chopped into small pieces. Add the walnuts and blend again until chopped. 3. Melt the butter in a medium saucepan with the honey or syrup and lemon zest. Tip in the dates and walnuts. oatmeal, flour, sweetener and vanilla and stir until mixed. Add the egg and beat to a thick paste. 4. Take spoonfuls of the mixture and shape into balls. Flatten onto the baking sheet spacing them slightly apart. Sprinkle with extra oatmeal and bake for 10 mins or until golden brown around the edges. Transfer to a wire rack to cool.

DIABETES AWARENESS WEEK

Today's diabetic recipe - CARROT AND PINEAPLLE MUFFINS - Preparation time less than 30 mins, Cooking time 30 mins to 1 hour

INGREDIENTS - 100g plain flour, 100g plain wholemeal flour, 1 tsp baking powder, three-quarters tsp bicarbonate of soda, 1 and a half tsp ground cinnamon, half tsp salt, 200ml vegetable oil, 90g caster sugar, 2 eggs, 120g finely grated carrots, 225g tinned crushed pineapple, semi-drained, 100g raisins

METHOD - 1. Pre-heat the oven to 180C/350F/Gas 4. 2. Sift together the flours, baking powder, bicarbonate of soda, cinnamon and salt and mix well. Beat the oil, sugar and eggs until well blended. Add the grated carrots, crushed pineapple and raisins. Gradually add the flour mixture, beating just enough to combine all the ingredients. 3. Pour the batter into muffin trays lined with paper cases and bake for 25 minutes. Cool on a wire rack.

DIABETES AWARENESS WEEK

Today's diabetic recipe. SUMMER PUDDING. Serves 8 people.

INGREDIENTS -

1 Slightly stale, good quality sliced white loaf, 225g redcurrants, 225g blackcurrants, 225g whitecurrants (if available), 225g raspberries, 225g blackberries, 225g caster sugar

METHOD

1. Remove the crusts from the bread and leave to stale a little further whilst the fruit is being prepared. 2. Put the red, black and white currants in a pan with the sugar and bring to a bare simmer over a low heat, stirring occasionally. Simmer for 10 mins, then remove from the heat and stir in the raspberries and blackberries. Allow to cool completely. 3. Line a pudding bowl with the slices of bread, trimming them to fit and reserving some for the lid. 4. Stand this bowl in a tray with a rim and fill the well between the bread slices with the liquid-soaked fruit. 5. Cut the reserved slices of bread into triangles and use to form a lid to cover the pudding. Trim any protruding bread from the sides, cover with a circle of greaseproof paper and put a plate on the top which should just fit inside the rim of the pudding bowl. 6. Place tins to the total weight of 1.5kg on the plate and transfer the whole assemblage to the fridge. Keep for up to 3 days, occasionally spooning back any juices that have overflowed into the tray. 7. To serve, remove the weights, greaseproof paper and plate, then carefully run a flexible palate knife down the sides and under the pudding to loosen it from the bowl. 8. Put your serving plate on top of the bowl and gripping firmly, turn over. Tap the base of the bowl with a wooden spoon for luck and remove the bowl. Spoon any accumulated juices from the tray over the top and serve with creme fraiche.

DIABETES AWARENESS WEEK

All this week we're bringing you special diabetic recipes as part of Diabetes Awareness Week.

BANANA AND PECAN LOAF

Serves 12. Preparation time - less than 30 mins. Cooking time - 30 mins to 1 hour.

INGREDIENTS - 75g plain flour, 75g wholemeal flour, 1 tsp bicarbonate of soda, 1 tsp ground mixed spice, 100g softened butter, 100g caster sugar, 2 large bananas mashed, 2 lightly beaten eggs, 100g roughly chopped pecan nuts.

METHOD - 1. Preheat the oven to 180C/350F/Gas mark 4. Grease and line a 900g loaf tin. 2. Sift together the flours, bicarbonate of soda, and mixed spice, tipping any bran in the sieve into the bowl. 3. In a large bowl beat together the butter and sugar until light and fluffy. beat in the bananas and egg, then stir in the flour mixture along with 75ml boiling water. Stir in the pecan nuts. 4. Spoon the mixture into the tin and smooth out the top. Bake for about 1 hour until risen and golden. Delicious served warm.
