A Diary Of My Day - By Andy Harris

Fifteen Cornwall trainee chef, Andy Harris talks about his visit to a local primary school in North Cornwall.

First of all – just to introduce myself, I am Andy Harris and I am a trainee chef at Fifteen Cornwall. I wanted to tell you all about some of the things I have been doing lately - apart from working hard in the kitchen and at college!

Last week, I and fellow trainee chef Emily, along with Head Chef Marco Tedde of the Charles Hallé Restaurant (Bridgewater Hall), Manchester, visited Downderry primary school which is situated by the sea in the North Cornwall.

The point of the visit was to talk to the children who were aged between 9-10 about healthy food and cooking, and they had to think about making a meal and a dessert to sell in a restaurant.

The day started with a happy ice breaker where we told each other our names and the foods that we liked. Everybody was keen to join in. Following this, the kids spoke to us about the research that they had done on Cornish food and I was really impressed with how well they did.

In the short break that we had after the Cornish food discussion, I played football with some of the kids which was great and after all that running around we really built up an appetite, but it wasn’t time for lunch yet!

Back in the classroom, the kids were split into 3 groups and asked to write down what their favourite main meal and desserts were. Each group then had the task of deciding upon one meal that they would all eat.

Following a short break for lunch, the kids took part in some descriptive exercises where a type of food was shown on the overhead projector and the kids had to describe it to us as if they were trying to sell it. One of the things they had to describe was a chocolate pudding, which some kids had no trouble at all selling. The descriptions that we got back from them were brilliant and could have sold me chocolate pudding a hundred times over!

The children were then asked to use this technique in the menu idea that each group had decided upon earlier on in the day and the winning menu was to be made at a real event attended by 1000 people. Wow!

Marco, Emily and I had the task of judging the menus, and believe me – it was hard! Each group had given their all in this activity so choosing a winner really wasn’t easy!

At the end of the day, I came away feeling really positive. I really enjoyed getting involved with helping the kids understand more about food. After all, it wasn’t such a long time ago when I knew nothing about food and cooking, and look at me now? I even had to overcome a fear of fish in order to get on the Fifteen Cornwall programme! It’s amazing what you can do when you put your mind to it.

Thanks for reading everybody! I look forward to blogging again soon!

Andy Harris.

Source: Jo78
Saturday 18th November 2006, 1:46pm

Fifteen Cornwall is now looking for the second intake of trainees and in a special show aired on 18th November, Bob McCreadie spoke to 2 of our current trainees about what the programme has done for them and James Martin had a chat to Jamie Oliver!

Jamie Oliver spoke to James Martin for the Bob McCreadie show on Pirate FM about the recruitment for the second intake of Fifteen Cornwall's trainee chefs, urging anyone who is eligable for the programme to apply.

We are looking for young people aged between 16-24, living in Cornwall and out of work and education to apply for the programme and become part of the 2007 group of trainee chefs to work in the restaurant.

People can apply online by visiting www.fifteencornwall.co.uk or you can call Job Centre Plus on 01872 355015. Two of our current students, Frankie Yeo and Sam Lounds spoke to Bob about what it is like working in a busy kitchen and how the Fifteen Cornwall opportunity has completely turned their lives around.

Sam said, "Joining the programme has been a real eye opener. I have learnt so many new skills and have gained so much more confidence and self belief. The Foundation has been so supportive and I have now got a sense of direction and I know what I want to do with my life. I would encourage anybody who fits the criteria for the course to apply without a doubt. It's certainly changed my life dramatically"

So if you are eligable, or you know somebody who is, then we want to hear from you. The closing date has now been extended for another 10 days until Monday 27th November so there is still time to get your applications in to us.

Once again, the number to call is 01872 355015 or apply online at www.fifteencornwall.co.uk
